When I lived in Staunton, there was a Mennonite town close by that had the best bread, and some argue that small communities such as the Amish, Mennonites, etc. have the best baked goods due to extremely refined techniques learned over the course of a lifetime. They also process everything by hand.
I love making bread out of different types of flours, or the varieties thereof, especially when you're going for a specific flavour or texture in combination with the other ingredients. Different flours also react differently with varying amount of sugar, and when the gluten is forming, which creates a very pleasant result in most cases.
Braided artesian breads cook in a unique way because of the fact that they're braided, which is very pleasant :) - it's also a ton of fun to make these with friends because these can result in lots of fun shapes.
