well its simple how they found out... everyone in Stoneybrooke is a lawyer so they probably all work together and go home and talk about how lucky it is that Mal's dad got fired from his lawyer job and not them... ;)
I felt pretty bad for Claire during this snark. It's reasonable for a five year old to be sad that the luxuries she's grown accustomed to are no longer available. If I recall correctly, she wasn't bratty about the doll-- just sad. Kids that age don't understand money. They don't understand that one Skipper = two meals for the whole family.
And the whole "fix yourself lunch" thing was kind of fucked up. I know Pike mealtimes are always catch-as-catch-can, but someone always helps Claire because, again, SHE'S FIVE. Claire really ate the stick in this book. Poor kid.
