It's because she's a creationist. And he (rightfully) doesn't like the idea of someone who can't understand reality to have access to nuclear weapons. So he's not going off on dinosaurs, but her belief that they never existed 65 millions years ago, despite the fact it's.. well.. a fact.
Oh trust me, I am not in any way saying that Matt Damon is unjustified in how he feels. I am certainly exasperated by how dumb Palin is. What I mean by "going off on dinosours" is that when he started talking about it he had an expression of such flabberghast that struck me as funny, and it seemed really sudden (I was unaware of any statement Palin made about dinosaurs).
