Also for us Yanks, courgettes are zucchini. Look at me, googling that for myself rather than asking you! :)

I roasted Brussels sprouts the other week. DELICIOUS!!!!! Maybe next time I'll put garlic in too... Mmmmm, garlic......

Duh. Not only did I know that, but I generally say zucchini, even here, because it's a cooler word. Similarly I choose aubergine over eggplant. ;)

Roasted Brussels sprouts? I LOVE Brussels sprouts! And I love roasted vegetables (been roasting asparagus a lot over here). One question, though: did you follow the recipe? I saw some comments there that said the cook time was way too long and to try 15 minutes at 425 instead.

I mostly followed the recipe, though I think I used less oil and I definitely used less pepper. I cooked them in a whatever-a-ceramic-dish-for-roasting-is-called rather than a baking sheet, and I shook them every fifteen minutes to redistribute them. I may even have misread the recipe and cooked them for a total of fifty minutes and they were fine, but I don't remember that- it might have been that I put the frozen pizza in for longer, because that usually cooks at 425F. Also, I quartered them. As long as you check them, you should be fine with the time.

Recipes- it's not like you gotta actually follow them!

I just found out the other day that you're vegan! I like you even more. :-D I recently went vegan, just after the New Year. I was lacto-ovo for about 9-10 years, then omni again for a several years (those were very bad, unhappy years) and then lacto-ovo again (mostly lacto, occasionally ovo) and now vegan. I wish I'd done it ages ago.

I feel great, but I don't know if that's the change in the diet or because I stopped drinking and smoking, too. Whatever the case, I'm happier not eating animal products, and that counts for a lot, doesn't it?

I'm not completely vegan these days. When I got together with Kit I started having dairy and eggs that are certified free range by either the SOIL Association or RSPCA Freedom Food. Then I read on their websites that both are telling their suppliers to draw up plans for how to phase out the culling of male dairy calves, went through the obvious logic of realising that even if they're not culling them they're probably being sold for veal or at least beef, and possibly not even to free-range suppliers, and cut out dairy again. So now I have trusted free-range eggs but am otherwise vegan.

yum, i love roasted veg with pasta. i always tweak recipes too. in a recipe like this i would leave out the oil (you can totally roast veg without oil) and salt, i leave these things out of recipes all the time without any problems.

LOL, I couldn't live without salt. I don't use much oil, and sometimes do without it, but I tend to go for it when roasting stuff.

I just worry about blood pressure/heart disease, so I always leave it out. I find your tastebuds adjust.
