I didn't have health insurance for about two years after college because of not finding a good job right away, and it wasn't a problem.

It shouldn't be a problem. Health insurers are more used to dealing with clients who don't have an insurance history or who haven't had health insurance for a time. Health insurance is purely elective though people really need it. The problem with the car insurance is that you are legally required to have insurance to drive in a lot of places so it is mandatory and the insurers couldn't wrap their heads around someone electing not to drive/own a car. Car insurers also base their insurance rates on the length of time you have been driving so they probably didn't have an equasion in their rate schedule for someone in your situation. You would think they would have something in place since there are plenty of returning vetrans and soldiers who post overseas for more than a year who won't have an insurance record and will require car insurance when they get home but I suppose they consider those exceptional circumstances not worthy of the extra paperwork neccessary to create the proper rate schedule.
