The Royal Armouries is good, and it's free admission! They have an art gallery (which was sadly closed when I was visiting Leeds). You can also get a dirt cheap return ticket to go to York, and it's only 20 minutes on the train (you might like to come to York to see the Minster, JORVIK, Yorkshire Museum, Castle Museum, Clifford's Tower...). Not sure what to tell you about eats or night life in Leeds, however.
I would definitely look into hopping over to York for one of the days as it's a wonderful city.
As for Leeds, I don't really know any of it except the station (which I know better than I'd like) and the walk along Wellington Street and the A65 which I did every day to get to work. That said, as a teenager I went on a school trip to the Thackray Medical Museum and I remember enjoying it very much.
The medical museum looks like fun! I may feel a bit creepy (kinda gothy girl wandering around and squeeing at various things by herself) but I'm definitely going to go anyway.
I would second both the Thackray Medical Museum and Royal Armouries - the latter probably deserves the best part of a day to do it justice if you're a first-time visitor. Best to go on summer weekends when they have the jousting and falconry displays outside and 'interpretations' (demonstrations) of fighting and martial arts techniques in the galleries. I know it well as my ex used to work there and I was a relatively frequent visitor.
Thackray is part of the sprawling Jimmy's hospital site - a bit out of the centre, but there are plenty of buses go to that bit of Harehills.
I have a few friends that used to live there, and that's what they recommended as well : p But if I've got a day of downtime, I might as well make the most of it.
A little unfair methinks. I'm a Midlander who made Leeds my home in 2001 and whilst it took me a while to warm up to it, there are now few places in Britain I'd rather be. It's got plenty going for it - a good variety nightlife, shopping, places to eat, trendy suburbs like Horsforth and Chapel Allerton, cultural diversity that seems lacking elsewhere in Yorkshire, the biggest city park in Europe, one of Britain's finest Victorian city centres and just the right balance of small-town bumping into people you know in the street and big-city anonymity. Sure it's not London but for me that's one of the things I love most about it!
sure, i was unfair, but also being stereotypical (which is quite unfair). all i've heard about Leeds was that it was uninteresting. i've never been there -- and it seemed the commenters were matching the stereotype. so thanks for adding your two cents.

but frankly, the only time I've spent in Leeds has been time spent trying to master the horrendous road system to find my way out.
