Just musing with Blake today about the places we would like to go on a vacation at some point, and thought I'd write them down here to keep track of the list. We are so not sun and beach people, so that pretty much cancels out any place that would be particularly hot and sweaty.

Belgium- only saw the airport but they brew the world's best beer there. Make sure to visit a couple trappist breweries if you get the chance.
Italy- spend some time in Rome, there is so much to see. Check out Vatican City, it is pretty amazing. Venice is really cool, but it smells terrible.
France- they hated Americans back then, I doubt it's changed much. Paris has a lot to see and do, don't miss the Louvre. I heard that the palace of Versailles and the catacombs under Paris are worthwhile also.

Every thing we see about Paris makes us not want to go there, but I think I might be interested in going to somewhere else in the country to enjoy some French life. Also I've taken like 8+ years of French, so I'd like it to be useful at least once in my life. ;)

Blake went to Spain and loved it, and I would love to go back there with him at some point. It just seems like a really warm, interesting, and laid-back country.
I hadn't really thought about Denmark, but now that you mentioned it I'll look into what we would want to see there. It's definitely the climate we like, if we go during the right time of the year. :D
When I think about France or Italy, I wouldn't want to go to any of the major cities because of the problems you've mentioned and the crush of people. Those countries are lower down on where I would like to go, but we'd have to try and plan out something off the beaten path... but I'm sure most things that claim to be "non-touristy" turn out to be even bigger magnets for tourists. Oh well, something for us to think about! :)

Orvieto is a hilltown, quaint and pretty. Pisa was kind of a letdown, the cathedral next to the tower was actually the highlight (they wanted 15 euro to climb to the top of the tower!)
You'd love Rome! We did.
Lots to see and do in Italy, don't miss it.
We loved Paris too.
Personally I'd like to go back and do more of the smaller out of the way places, and do the wine country too.
Lots of beautiful museums it both countries too.
