Having a 30-year-old antibiotic resistant infection in one knee has made me very sceptical of anyone's claims that "it won't be any problem for humans".
I get by by not eating sugar (it loves that), and eating enough herbs to plug up a horse, and regular acidophilus. Unlike antibiotics, it seems to gain resistence to the herbs very slowly, or very little.
