Hommous with Pita Bread

this qualifies as 'meal' to you? my grandmother would never let you leave the table before eating at least five other dishes.

would it be totally ridiculous to hope for recipes / meal reports?

Hey!

I'll post successes and recipes, sure. And I said "meals/snacks" earlier specifically because hommous is definitely a snack. :)

If nothing else I will post a recipe for hummous because it is easy to make really tasty hummous (provided you have a blender).

Favourite of mine -- rice and ratatouille (okay, rice is fairly high-energy, but it's still good healthy nosh).

Do you have a good ratatouille recipe? I tried making it once and completely did not enjoy it... but I wonder if it was just an "off" recipe? The dangers of information from the internets...

This is how I always make it. It produces a thick glop which is generally very well received -- there are no doubt exceptions, but if you don't like this then you probably just don't like ratatouille, full stop.

When "frying" everything, be gentle. The dish doesn't take much effort to prepare, but it works better if it has a good hour or two to cook.

Take one saucepan. Chop two onions (one if it's really big) into the pan, and and gently fry in a bit of (olive?) oil for five minutes or so. Chop one or two red bell peppers into the pan and let 'em fry with the onions for a while longer. Chop up a small-ish aubergine, add that to the mix, and let it all gently mulch and fry on a low heat for a while.

Meanwhile, into another saucepan, chop up a courgette and lots of garlic and let that fry too, very gently, until the courgettes are kinda a bit soft and on the squidgy side. Definitely don't overdo this pan.

Tip everything into the same pan. Add plenty of chopped tinned tomatoes (two cans maybe), and extra tomato material like ( ... )

We love ratatouille and make it now and again. My secret to rounding it out is simmering grated cheese into the mix.

I'll stop crowding your journal with food posts but we are eating healthier and losing weight. When I posted the promised dressing recipe your post made me want to poach some chicken.

I'll give you one of my healthy tricks. One is to boil and rice cauliflower. Really easy - you just boil it in plain water till soft, drain and over a low heat (just to remove any excess moisture) in the same pot I take a potato masher to it and then remove it from the heat. This is a great substitute for rice - delicious even. We even put stir fry over it. Michael loves it.
