It's the time of year for turkey, which means it's also the time of year to fry one. Since snarkymarcy's dad taught me how to fry a turkey 5 years ago, I've taken his notes and revised them after each turkey. Instead of calling for "Enough oil to almost fill the pot", shouldn't that be with the turkey in it? I recall a lot of turkey frying disasters happen when people overfill the fryer, not accounting for the volume of oil that the bird will displace.

From the description (fill to the measured mark) that's what he does call for. I think the excess is just to ensure that you have enough oil, but just a bit more than the measured amount should do it.
