It was recounted in Cameron's movie? I guess I missed that part...

You see him at the very end of the movie dressed in the white chef's outfit. He pulls out a flask and drinks it while he hangs onto the back with Rose and Jack.

Cameron really tries to show that THIS was the guy. The guy WAS dressed in his white chef's outfit, but he had a black pea coat over it and he never carried any alcohol out of his room that night.
