The cookies are very good, I've gotta say. But I think my all-time favorite cookie has to be the Snickerdoodle. If I ever thought of a filling that I could put between them, I'd never leave the house.

Even so, if you just made a small batch and only had one of them, it would be a nice treat. They're quite dense and filling, so one is pretty much enough to satisfy a sweet tooth. You need to splurge every once in a while!

She adds this:
"Note: I just add powdered sugar to the filling until it tastes right to me. I like to chill the filling and then put it in between two warm cookies. If I have to prepare them ahead of time (like for the open house) I just chill the filling while the cookies cool, then I make them into sandwiches and chill them in the fridge."
