Inadvertently made a delicious Good Friday din-dins that made me very proud: a salmon and rice pastry bake thing with a scalloped-potato dish on the side. Never again, mind you. It took 2 hours to prepare and a further hour to cook. I'm not cut out for that. Was too tired to attend to the carrots we were going to have for vegies and T seemed ( Read more... )

Has the US been gripped by 4 Ingredients fever too? For the longest time - in fact, until just now - I thought it was all about this book which I now realise is the copycat. The trouble with the latter, at least, is that they expect you to have a pretty well-stocked pantry of staples already - ok, fair enough... - and then the 4-ingredient recipe is served with a sauce of another 4. I call that an 8-ingredient recipe, the cheats!

Rice + pastry + potato = delicious! You should make it - the carb load is sure to cure you of your insomnia if only for one afternoon. Grab the free Autumn Coles mag with the Easter cake on the cover (first time I'd ever noticed the mag) and turn to p. 15. Ironically, the Coles deli counter had no Tasmanian skinless salmon potions for sale so we had to run over to Woolies but perhaps you have a fishmonger...?

The potato bake on p. 14 inspired me to go by the slightly more '70s version on p. 139 of the Margaret Fulton Cookbook: The Australian Classic instead. And by '70s I do mean *nutmeg ( ... )
