I think I know the feeling of "oh hey there's something touching my whole foot" from the first time I tried on a pair of Chacos. Unfortunately, the arch falls over time on those sandals (but not on my foot) -- but they're still my preferred footwear, largely for that reason.
The REI dude did recommend Chacos. Unfortunately the few times I've tried some on they just felt all wrong on my feet. Keens seem to fit the external shape of my foot pretty much perfectly, so I've acquired many of them over the years and love them all.
I wonder: do you have wide-ish feet? I have the vague impression that Keens are wide, whereas Chacos are narrow. I definitely have narrow feet; this is particularly a problem for me with skates and ski boots, which you can't just tighten harder.
For the insoles: I have the green superfeet. They're slightly better than whatever comes with the boots, but they are only slightly better.
From using those foot measuring things that shoestores have, I think I have "average" width feet (although I frequently overflow the sides of dress sandals, which seems odd). I think the key fitting point is that my toes are relatively squat instead of pointed - that is, the first three toes are more flat/rounded instead of slanting upwards towards the first toe, and all my toes are short. So have a wide toebox in the shoe (but not necessarily a wide shoe) is essential.
