In my own Chazz background I totally eliminated the orphanage thing....since it's not addressed in the movie and also deleted from it, I throw it out. Plus for some reason..there's something about it that doesn't quite work. Not to mention their ages are a little weird (I guess that's dependent on whether you take their agaes as listed on thier criminal charge papers floating around the net, or as the deleted scene gave them).
I think the only thing regarding his parents was "I never had a father okay!" in the end of the movie when he's crying right before he calls Jimmy his brother.
So I kinda took that and made my Chazz...with basically an abusive or mistrustful father in his past. I don't ever make him an orphan because something about that just seems off, but he didn't have a wothwhile father or maybe general set of parents either when I write him.
I count deleted scenes as canon, but if I ever have the urge to throw out or alter something that would be canon via deleted scenes, I'm fine with that, too.
Generally I don't bother thinking about it. My canon begins with the first competition in the movie.
If by "personal canon" you mean "stuff I randomly thought up and talked over with Xena..." ;) I know she and I have different continuities in our heads, but I can't remember in my story what was originally mine and what she added to it. So, a disclaimer: Xena helped with this some. I think. It was a long time ago

His parents are given as Michael M. Michaels and Michelle M. Michaels, and both are listed as deceased. He's also listed as being born in Irvine, CA, like Will was in real life.

I think you are right, the orphanage thing doesn´t quite work, the only thing that it perfectly explains is the reason for Chazz´s hatred for Jimmy.

Chazz's biological father either left or died when Chazz was three <--- I agree with this part.
For me, his mother was a single parent, she worked at a cabaret and often took Chazz to work, that´s where he got his 30 year old girlfriend.

I´ve seen before those sheets, but since they weren´t mentioned at all in the movie, I don´t think they are canon.
Besides, Chazz said he never had a father and he grew up in Detroit.
So, for me, those sheets are like an inside joke for the cast.
