ahh in my experience pies and crumbles with only berries tend to get too mushy :( wouldn't it be okay to use unripe pears if you're going to bake them anyway? oh well no hurry I guess :) I've been so tempted to steal pears and apples from people who don't seem to care that they have fruits growing in their yard or in front of their house. you've reminded me to see if there are still any blackberries in the park...
yeah, I thought about using the pears anyway, but mostly they're just a bitch to cut up when they're still so hard. I let one ripen for about week and then when I ate it it was sooo soft and delicious! I am excited for more of that.
I was worried about that (especially since I doused the berries in brandy before baking), but the cornstarch/sugar I mixed in with the berries before sprinkling on the topping seemed to do the trick. it's gooey but it doesn't fall apart :)
