My theory is that the house party where Mary came up with Frankenstein never happened, so Byron never wrote his story and never inspired Polidori to write his. It actually kind of makes sense.

It's as good an explanation as any in a reality where an author's fictional creation can live in the author's own world.

(But then, are we to give JM Rymer all the credit for establishing the vampire genre in Byron and Polidori's absence?)

Perhaps in a world where vampires are 1. real and 2. gross, face-eating monsters, nobody ever does establish the sexy Lord Byron vampire genre. (Wow, the worldbuilding implications of the Shelleys are kind of interesting, aren't they...)
