How does one cope with wildly fluctuating emotional states? What causes this? Are there methods of dealing with them without the application of Organized Medicine?

I think, maybe, I have a problem.

You could be bipolar? Rapid cycling?

Also, consider the possibility of food allergies.

I would take a look at food allergies as well. Ditto food on additives, artificial sweeteners and HFCS which has been pegged as mood altering ingredients which have been thought to be the culprit for the increase in ADD/ADHD in children as of late. Wheat (gluten) may also be a factor. Keep a diary of your intake and moods and look for a pattern in your diet and the way you feel.

Also, see a doctor but explain what meds may have done to you in the past and why you don't want a quick fix of drugs to paralyze your neurotransmitters.

getting off "the junk" (cigarettes, cocaine, etc.) causes wild mood swings, so does being a teen aged girl. but i don't think either of these things pertain to you. just trying to list all possible reasons before choosing an answer.

Exercise FTW. I'm a bit hypocritical in that I haven't been to the gym in months, but I really do think it helps.

A therapist once told me that if you suspect you have a problem it is likely that you do, but that you recognize it, you are on your way to solving said problem.
