Ok, here are my theories.

Theory #1: Katara is the reborn Yue and Zuko was the demon in the legend. He tried to turn her into a vampire back then, but failed. Now he tries again in the hopes of making amendments for his past mistakes (whatever they were). And he is drawn to Yue/Katara because they're soulmates.

Theory #2: Zuko has come to realize that Katara is special in ways that haven't been disclosed yet, although at first he was in it only for the thrill of the 'hunt'. This being 'special' of Katara is the reason why Long Feng attacked her and why Suki has been keeping an eye on her that night. Katara herself is not aware of being special in any kind of way, however.

I'm assuming that Zuko has been banished from Vampire Society a couple of centuries ago and has a sort of legendary reputation which is why Suki apparently recognized him (I'm curious to whether Aang will recognize him, too, when they meet).

I'm waiting for witches, shapeshifters, roses, foxgloves and dahlias. And for the circles ;o)

As for Theory #1, remember, there were more individuals mentioned in the legend. Hehehe. ;)
