HOMEMADE WAFFLES

Decided to make some waffles from scratch, on a sunny Saturday morning. Nothing like a sweet American breakfast sometimes :) We actually haven't made waffles before, usually just stick to pancakes and fry-ups of bacon/sausage/eggs/etc. I'm VERY particular about my waffles - I don't like almost all the ones I've ordered in restaurants. I specifically like 'em a little crisp on the outside, but very moist on the inside. Somehow, Australian cafes just CAN'T make waffles, I don't think I've ever discovered a place that made them properly. Same can probably be said for Shanghai.. and even if there was an American joint here that did it, they'd charge an arm and a leg for it.

Thing is, the ingredients cost a mere few cents - quite literally. Have a look at the recipe below - most of the ingredients you can probably already find at home! It's also a cinch to make, the only annoying part is waiting the few mins whilst it cooks in the waffle maker, because the smell DRIVES YOU CRAAAAZY! :P An awesome way to wake up in the morning, and also have your significant other hopping around in excitement and then declaring you the best thing ever. Well worth it ;)

Mix 2 egg yolks, 1 3/4 cups milk, 1/2 cup canola oil, 1 tsp vanilla essence


Mix in sifted 1 3/4 cups plain flour, 1 tsp baking powder, 1/4 teaspoon salt, until just combined


Beat 2 egg whites until stiff peaks form


Fold in gently, do not overmix


Pour batter into waffle maker and clamp shut for a few minutes until golden brown


Fresh, hot waffles! Served with bananas and maple syrup


Lightly crisp on the outside, moist and soft on the inside.. mmmm....
