The judge who presided over my parents' divorce agreement (or some important step in that agreement) was later removed from office for racism. According to people who worked for him, the word "Canadian" was used in his office to refer euphemistically to Jews (the judge did not like Jews).

I think the actual analogue to "person of color" would be "person of country" :)
