I have faith. Sherlock is smart; John tenacious. they will figure it out. May there be plenty of angst along the way! :D
I like that John was so immediately intense when he realised the truth about Sherlock - did not let his emotions cloud him. Poor Sherlock - not used to being so hated and feared - but he is manipulative for all that - unashamedly so.
Sherlock walking such a fine line here, all of it new to him.
So the humans know about holly but not about water?

They know about the holly because it's a visible and obvious thing. If someone's skin turns a color and they start screaming, that's a bit obvious. Water is just cold and plenty of people get cold/sickly and so on because this is a pre-industrial/vaguely-approaching-industrial world. In many areas, water is still not terribly safe to drink, so someone refusing to drink water isn't out of the ordinary. Up north where they are, contact with vamps is largely the raiding in the east where Moriarty's people kidnap humans who are never seen again. Not really a good recon situation. As for communication down south, well, that's dangerous because There Be Sirens.
