Anything by Nora Roberts is good for beach reading. I always read a couple of them when I'd go to Hawaii. I really like all of her triolgy series that she has. Her Ireland tril is good as is her Witch Island series.

Nalini Singh's Psy-Changeling series. It sounds kind of cheesy (and it is, to a degree. I mean, it's a futuristic paranormal romance series) but the series is amazing and original. Everyone I know who reads it becomes instantly hooked.
