This makes me wonder if Katara pointing out that Toph can still smell is foreshadowing for how a hypothetical wolfdog Toph would need to use her sense of smell more heavily.

That is certainly a possibility. To be honest, I still haven't decided if we get wolfdoggy Toph or not. She'd really like it, but the Water Tribes do tend not to like to share their lycanthropy.
