I have heard of yummy puddings, but never tried to make anything with them. I eat the Fuyus like candy, though, especially chopped up and mixed with a bunch of pomegranate seeds.
Use the pulp of the pear-shaped ones to make persimmon pudding, or persimmion pie. FOOD OF MY PEOPLE.
The flat, firm ones are delicious to eat on their own, or in a salad, or with yogurt. I also had them with haricot vert, hazelnuts, pomegranate seeds, and frisee in a sherry vinaigrette the other night.
