Ice crystals form at different pressures and temperatures

Note to self:

If I put a closed container of water into our freezer at work for long enough to cool it down, but not long enough to form crystals, then open the container, ice crystals form almost instantly because of the sudden pressure drop.

The freezer isn't very good, and stuff lingers as very cold liquid like *forever* before it freezes.

I love it when something weird happens then you go, oh yeah, I see how that works, cool.
