you also have to remember that no matter how experienced you are you will always make MISTAKES in the kitchen - everyone does. i never mind my staff or myself making a mistake - you must learn to fix them. what sends me over the edge is someone being lazy and not noticing or caring about a mistake and letting it go.
Just for the record, whether it's "basic stuff" or not, we still, most of us, have to keep relearning it. That's the mystery and the wonder of attitude -- overcoming perfectionism (and other blocks) is an ongoing process that never ends.
