So I'm feeling enormously successful this weekend. I don't know what it is about home projects that just makes me so insanely happy. My monterey jack is drying, and will be waxed and put away to age tomorrow or tuesday. My first batch of ricotta is probably gonna be tonight's dinner. Raw milk is delicious, but I do still think Louis Pasteur is a hero.

I totally agree about Louis Pasteur. In a country where most of our dairy comes from large factory farms, pasteurization is pretty much mandatory for health and safety. The particular kinds of ick one can get from improperly handled raw milk is pretty darn scary (death is not out of the question). And pasteurization has allowed us to produce a lot more safe (and affordable!) milk for drinking, making milk more accessible to more folks, which overall I think is a good thing.
The only way I'm willing to drink raw milk is if it's from a farm I have some personal contact with. I like the guys at the farmers market & have been checking their farm out for awhile & felt good about buying from them. But they're a small family farm that only produces so much milk, and they only sell it in the local community.
