Marie and iridophobia would both have some wine making skills. (Marie does for sure, and I assume Jacuzzi's bootlegging skills might include wine. He never really specified.)
Applejack has juice making skills, which I guess could possibly be stretched into wine making but her forte is more apples than grapes. Adiane also has wine drinking skills, but those don't seem like they would be useful until Saturday.
