Tis the Season for Soup

My friend Madelyn over at My NonProfit Experience asked that I send her my soup recipes. We are both vegetarian and like to recipe swap. I thought I would post them here as well

Random, I was just looking up lentil soup recipies. I have been trying for years to recreate this one I had at a moroccan restaurant in Vegas but there was some spice in there I've never been able to identify.

Lentil Soup

I've only made lentil soup once. I followed a recipe that had a surprisingly large amount of onion and ginger in it. It turned out really good.

I've never had Moroccan food, that I can remember.

I make Tuscan white bean soup which is very similar to this but has kale in it as well. Mmmmmmm, greens!

If I have any greens, especially kale from my own garden, they go in the soup too! :D
