Recipe Request - something with lots of mint

So I have these mint plants in my backyard, and because mint is what it is, I have tons of it. I'd love to use it for something other than mint tea, but I'm not sure what. Does anyone have any good recipes that call for a lot of mint? Fresh or dried is good, but not mint extract - that's not what I'm trying to use here. Thanks bakers!

This recipe only uses 6 sprigs but you really can't go wrong with fresh made Gelato, especially when it's hot outside.

A restaurant that has changed hands (boo hoo), had a lovely iced mint lime beverage that was made with mint leaves, fresh lime juice, and sugar, over crushed ice with a straw. They whizzed the heck out of everything so you just made sure to check your teeth for green shreds before you left the restaurant.

I never got quite the same flavour at home, so all I can say it to experiment until you like it. :)

my mom used to make potato salad with red bliss potatoes, garlic, olive oil, and mint. i'm 99.44% sure it came from the silver palate cookbook and it was SO GOOD.

Mint is awesome in fruit salads, tabbouleh, lamb meatballs, and so on. ALSO I read about, but have not tried, a pie filling of finely shredded mint leaves, lemon juice, brown sugar, and some starch to thicken.
