I love carrot cake and these sound delicious. Would the recipe work as a regular cake or do it need to be cupcakes to turn out properly?

Yes, you can make it as a cake. Just make sure you grease the pans well, and/or line them with parchment and then grease them. Bake them for about as long as another cake recipe in the same size pan you plan on using.
