Recipe Request Frozen Cherries

Jan 24, 2014 18:31

This summer when Bing cherries were ripe, plentiful and on sale, I froze a huge bag. Now that it is the middle of winter, I want to use the cherries. Most of the recipes I have found were for fresh or jarred cherries. Does anyone have any recipes/ideas for my frozen cherries?

You can use frozen cherries in recipes calling for fresh cherries (as long as maintaining the shape of the cherry isn't important to the dish). Pies, tarts, cobblers, etc. I'd thaw and drain them well so you're not adding extra moisture.

Thank you so much for the info. I found a great cherry crumb bar recipe that I'm going to try.

If they're pitted you can use them as is in shakes and smoothies and skip any ice you may use. If not then see above.

Cherry Clafouti joanwilder January 28 2014, 17:36:58 UTC
This is good with frozen, jarred or fresh cherries:

Cherry Clafouti

2 T confectioner's sugar, plus extra for dusting
3 cups sweet cherries, pitted
3/4 cup self-rising flour (or use all-purpose flour + 1 tsp baking powder)
1/2 cup ground almonds
2 T sugar
4 T butter, melted
2/3 cup milk
2 eggs

Preheat oven to 375°. Grease 9 inch shallow baking dish and dust the bottom with the measured confectioner's sugar. Arrange the cherries on top.

Mix together the flour, ground almonds, and sugar in a bowl. Pour the melted butter into a separate bowl and whisk in the milk and eggs.

Make a well in the center of the flour mixture and add the butter mixture. Stir well, gradually adding in the flour, to make a smooth batter.

Pour batter over the cherries and bake for 25 min. Run a knife around the rim when done, and invert onto flat plate. The top of the clafouti should be creamy and studded with cherries, while the rest should have set to a sponge. Dust top with confectioner's sugar.

I'm having trouble finding ground almonds, is almond flour the same as ground almonds? What about almond meal? Bob's Red Mill has a product called almond meal/flour can that be used?

Sorry to be a pest.

No, it's not the same. You'd have to run whole or sliced almonds through a processor or grinder.
