I may NEED to make this. I love pumpkin and maple. Sometimes they are better than chocolate, and both together sounds delicious. Darn my baking three pies last night, rendering no immediate need for desserts this week. But for Saturday dinner at mom's . . .
I was a little concerned with the soft frosting (I could totally picture it just sliding off of the cakes, haha) but I popped them in the fridge and after it set for a day or so, it was really gooey and delicious. I'm pretty sure I ate a good 2/3 of the batch myself. xD
The original recipe calls for maple flavoring, so maybe using that instead of real maple syrup would lessen the softness, but I'm not the biggest fan of maple flavoring when I have the real thing available.
I was never tempted to try pumpkin in recipes, Every time i think of pumpkin I would remember my mom forcing me to eat pumpkin stew that i grew to hate (I wasn't even tempted to try the starbucks pumpkin spice drink) but incorporating maple in this made it sound so different! Good different, I will put this in my to-bake list for sure. :)
