What to do: Combine ingredients - butter & sugar first, then vanilla essence, and mix until light in colour (light and fluffy). Then add the flour (sifted) and the egg. Mix until all combined, and light-ish and fluffy. The mixture should look light-coloured.
Roll up in clingfilm/Gladwrap and chill for at least 1 hour.
Roll out onto Baking Parchment that has been lightly sprinkled with flour. (You may need to add more sprinklings of flour to the mixture and your rolling pin as you proceed to roll the mixture flat.)
Cut into shapes desired, then carefully transfer to metal baking sheets (covered with more Baking Parchment).
Bake for 10 minutes in a medium oven (180℃ or equivalent).
Cool on the baking trays for 5-10 minutes. When the cookies are cool enough to touch, transfer to wire racks to fining cooling.
