Cinnamon Butterscotch Muffins

This is really a King Arthur recipe that I somehow stumbled across when I was looking stuff up online. They call these muffins "Simply Sinful Cinnamon Muffins" which is really a mouthful, so I renamed them Cinnamon Butterscotch Muffins. I've never actually used a KA recipe, though I have used various and sundry of their products, so I can't comment on the generality of them. I do think, though, that if I were making these my first act would be to add a dash of cloves to the cinnamon filling. It strikes me as a little one-note flavorwise, but that's an easy fix with just a bit of some spice other than cinnamon to make it more complex. A small swig of vanilla in the batter would also help with that aspect. Cinnamon and butterscotch are both tasty, but I can find them cloying if there isn't some other flavoring involved.

I've had mostly successes with KA recipes, but some of it is personal taste.

A lot of the KA recipes have comments at the end, look on their blog for hints & tips from other users.. when in doubt email them that you found them underwhelming and their team of bakers will email you back with some tips & tricks. I've used their "hotline" with their recipes a couple times.

I did, was was how I knew to spray the cupcake liners! LOL A lot of people also said that they didn't have their cinnamon mix but made it the suggested way and it was delicious. I went back through the comments yesterday though and if I had dug deeper I would've found more mixed reviews instead of mostly positive ones. I supposed it could be that I just like a hell of a lot more cinnamon in my stuff than most people, too. :)

The recipes that don't use specialized ingredients (like their cinnamon filling or flavoring oils) have worked out for me. I've baked about a dozen recipes from their website and a lot more from their baking books and was happy with the results.

Thanks. I suspect that might be the problem, too. I had reservations when I first saw the recipe, but thought it would be OK since they told you how to make it yourself. I'll just have to try a regular recipe of theirs with no special stuff next time and see what happens.

Next time just a little bit more of everything and it might turn out well :)
