I love apples. I really do. I'll eat anything with apples in it even if it contains other ingredients I usually avoid - apple strudel is a good example of this. I carefully scrape out the custard and then attack the rest of it like there's no tomorrow. This is why every time I come across a recipe for apple cake or apple muffins I think I've found

I liked the flavor and the bounty of apple bits (and they were plenty sweet for my taste), but the texture of my muffins was exceedingly heavy and dense. I'll probably make them again, but try upping the wet content with buttermilk or yogurt to make the SUPER DUPER THICK HOLY CANNOLI BATMAN YOU WERE NOT KIDDING dough a little easier to manage (I think I may have overdeveloped the gluten while trying to incorporate all of the dry patches/apple bits, which can interfere with rising) and add a bit more leavening.
(Note: overdeveloping the gluten would have been harder to do if I had used all oil--gluten needs water to form.)
Texture issues did not stop me from consuming 4 of these today...may have something to do with the fact that I am pregnant and /constantly/ craving fruit.
