I love apples. I really do. I'll eat anything with apples in it even if it contains other ingredients I usually avoid - apple strudel is a good example of this. I carefully scrape out the custard and then attack the rest of it like there's no tomorrow. Made the muffins, using the lower amount of sugar and swapping half of the oil for unsweetened applesauce. I also used barely 1/4 of a cup of brown sugar for the topping. I got 22 muffins, but they didn't rise hardly at all so no monster mushroom caps for me.

I liked the flavor and the bounty of apple bits (and they were plenty sweet for my taste), but the texture of my muffins was exceedingly heavy and dense. I'll probably make them again, but try upping the wet content with buttermilk or yogurt to make the SUPER DUPER THICK HOLY CANNOLI BATMAN YOU WERE NOT KIDDING dough a little easier to manage (I think I may have overdeveloped the gluten while trying to incorporate all of the dry patches/apple bits, which can interfere with rising) and add a bit more leavening.

(Note: overdeveloping the gluten would have been harder to do if I had used all oil--gluten needs water to form.)

Texture issues did not stop me from consuming 4 of these today...may have something to do with the fact that I am pregnant and /constantly/ craving fruit.

if you ate four it's a good thing you lessened the oil and sugar! but really though, the muffins don't really need a higher wet content if you use a healthy vegetable oil because it really does help to make the muffin super light and fluffy. my batter was thick but not unmanageable and even though i think i mixed it pretty thoroughly it didn't become thick and dense. i hope you try them the original way! and congratulations on your baby :)
