Old-fashioned Honey Cakes
I love Honey Cakes, but they are very hard! A lot of people add butter to soften, but I don’t like the idea of ruining the traditional recipe. Here is something simalar to what you describe. Since my grandmother was Swiss German this was called Lebkuchen.

But I love Lebkuchen too! Thanks for the links - I tried making them before, but I didn't like how they turned out. I'll try one of these recipes later.
