Hi everyone! So I know it's not peach season yet... but these bars can be made anytime of the year, because they use frozen peaches. The recipe is from Cook's Illustrated, and they don't even suggest using fresh peaches even if you have them because frozen provides the most consistent moisture levels so the bars will always turn out perfect. I actually don't like peaches and had some frozen blueberries in my freezer so that's what I used (kept the apricot jam though) and I just loved it. I thought the crust was a tiny bit too sweet so I'll reduce the sugars next time I make it (and there will be a next time!).
