Peach-Apricot Crumble Bars

Hi everyone! So I know it's not peach season yet... but these bars can be made anytime of the year, because they use frozen peaches. The recipe is from Cook's Illustrated, and they don't even suggest using fresh peaches even if you have them because frozen provides the most consistent moisture levels so the bars will always turn out perfect. I made this today and it was delicious! The crust is to die for.

I actually don't like peaches and had some frozen blueberries in my freezer so that's what I used (kept the apricot jam though) and I just loved it. I thought the crust was a tiny bit too sweet so I'll reduce the sugars next time I make it (and there will be a next time!).

Oh awesome, so glad you liked it! Yeah I've been meaning to make it again--maybe next time with frozen berries and some blueberry jam as a substitute. Come to think of it, blueberries actually sound better with the almond shortbread crust than peaches...
