Quick Christmas Shortbread

This is the result of my first Christmas baking session of the year - a quick and easy shortbread which bakes into crisp, melt-in-the-mouth buttery awesomeness.

I'm making this right now! I didn't roll out the dough, so I hope that making these drop cookies will work out all right. :)

You'll have to let me know how they turn out as drop cookies...hopefully they should be okay. I know that another way of baking them is to roll the dough into a log shape and cut it into slices before baking it, so hopefully they'll work out!

As drop cookies, they turned out softer than shortbread normally would be, but they still have that shortbread taste! Next time, I'll have the patience to make them the way they're supposed to be made. ;)

In the US...what is Cornflour?

It's probably cornstarch. Most shortbread recipes that I have seen call for cornstarch.

Looking it up. I find that it could be Cornstarch OR Corn meal ground fine.
