Cinnamon Spice Brownies

Over the weekend, I had some family from out of town come for a visit. At dinner, I mentioned to my cousin that I would love to have my own bakery one day. After hearing that, he rescinded my invitation to their hotel pool and asked/requested/demanded that I bake something for him to try at breakfast the following morning. I asked if he had any special requests and he said I could make anything my heart decided. I knew I had to make something that would really knock his socks off. ingredients

nonstick cooking spray
1/4 cup butter
1 cup granulated sugar
1/3 cup cold water
3 eggs
3 Tbsp canola oil
1 tsp. vanilla
1 1/4 cups flour
1/2 cup unsweetened cocoa powder
1 tsp. baking powder
1/4 tsp. cinnamon
1/8 tsp. salt
1/8 tsp. cayenne pepper
1/3 cup semisweet chocolate chips
2 tbsp strong hot coffee
cinnamon sugar for dusting

Preheat oven to 350 degrees F. Line an 8x8x2-inch baking pan with foil, extending foil up over edges of pan. Lightly coat the foil with nonstick spray. Set aside.

In a medium saucepan melt butter; remove from heat. Whisk in sugar and water. Whisk in eggs, oil, and vanilla until combined. Stir in flour, cocoa powder, baking powder, cinnamon, salt, and cayenne pepper. Stir in chocolate pieces. Pour batter into prepared pan.

Bake for 23 to 25 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan by lifting up on the foil. If desired, brush hot cake with coffee. Cool completely.

Cut into bars. Sprinkle with cinnamon-sugar. Makes 12 brownies.
