Pumpkin Whoopie Pies

Decidedly more common on the east coast, I've been introducing whoopie pies to my friends here on the west coast. I've made them in traditional chocolate, but also in maple and pumpkin flavors. Pumpkin is hands down my favorite. These are so good, that I've had requests to make them every year for the past 8 years already. :) I don't care for

Definitely depends on how big or small you make them, but I get about two dozen of them when making them around 2 1/4-inches wide. (about 2-3 heaping tablespoons of batter per cake) I've seen these both tiny - about 1 1/2-inches - and huge - 4-5 inches wide! I settle for the inbetween. :)

Pumpkin gets pretty neglected most of the year except for Fall, so I can't really blame you for not having tried it. :) It's quite tasty in these, as well as spiced pumpkin cheesecake, and pumpkin rolls (sort of like cinnamon rolls but pumpkin flavored, with icing too of course.)

I like butternut squash soup somewhat (it's a lot sweeter) but I can't say I'd be a fan of the pumpkin soup either! You should definitely try it in these, there's not really so much in here that it screams pumpkin or anything, but I think it adds subtle flavor and makes the cakes really moist! Plus the filling is just plain delicious. :)
