Okay, somewhere today I saw something about pomegranate macaroons. I just can't for the life of me figure out where it was!!! Let me think where I've been today and work back from there lol

i'd suggest pomegranate molasses. you can find it in middle eastern markets

Perhaps a pomegranate caramel (in the stage between syrup and chewy)? Or just buy the jam and cook it down a bit to thicken it or buy a sugar-free flavor and add sugar over heat to thicken it?

You could also try reducing some pomegranate liqueur to intensify the flavor.

Grenadine is pomegranate-flavoured syrup, so it might well be useful here. You could use it to flavour a buttercream or whipped cream or ricotta. Or as someone else said, cook the jam down, and strain out any seeds?
