I wanted to make breakfast for dinner and I failed on cooking pancakes (am I the only one?), so I googled "baked eggs in toast". I came up with this neat idea!

That looks interesting... I generally do "nursery toast," which is what my (British) mom gave me when I was a kid (she's my userpic). It was a slice of toast with a round removed from the center (I use a shot glass), then fried in a pan with a good dose of butter. The egg is poured into the hole, so the yolk settles in the hole itself, but the white wanders through the bread. When the egg is cooked on one side, it gets flipped over so it can finish cooking the other.
The end result is a slice of toast that has a semi-runny yolk and delightfully chewy toast.

my aunt use to make these all the time! i made some the other day, we called em eggs in a nest. yum!

These look really yummy. I agree with the comment about the bacon, though. Yum yum!

And, no, you're definitely not the only one who is lose at pancakes-- I always end up with a pile of under/overcooked tatters when I try to make them. D:

I can't do pancakes very well, either...I usually stick to my waffle iron instead. :D

That looks tasty!! I agree with the comments about adding bacon and cheese...YUM.

I'm a waffle iron gal too. I finally took it out of the box since I moved out in April, but when I turned it on to rid it of the "new package" smell, it smelled like that and burning wires. Not good.
