When I bake cookies, I don't just wind up with an odd number, but I consistently wind up with uneven serving sizes. Bah.
Today I baked
Healthed-Up Oatmeal Cookies
Cookies.
Ingredients:
1 1/2 c oats
1/4 c + 2 tbs all purpose flour*
1/4 c + 2 tbs whole wheat flour*
1/2 c raisins
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
2 tbs butter, softened**
2 tbs canola or safflower oil**
1/4 c applesauce**
1/2 c packed brown sugar***
1 egg
1 tsp vanilla
Method:
Preheat oven to 350.
In medium bowl, combine oats, flours, raisins, baking powder, cinnamon and salt.
In large bowl, cream butter, oil and sugar. Add applesauce and mix. Add egg and vanilla and mix. Mix in flour mixture.
Using a tablespoon, drop cookies on parchment paper on baking sheet. Flatten cookies slightly as they won't spread much due to the reduced fat. Bake about 15 minutes.
Yield:
29 cookies, apparently.
*Original recipe: 3/4 c all purpose flour, no whole wheat flour
**Original recipe: 8 tbs (one stick) butter, softened, no applesauce or oil
***Original recipe: 3/4 c packed brown sugar
