As for larger than 8.5x11, if you have a newer version of Adobe Photoshop (CS2 or CS3), it has a stiching function where it can stick together multiple images if they have overlapping pixels.

And I feel like such a dumb artist. I thought that there wasn't that function in CS2 just CS3. _-_ Just went in and realized that photomerge does exist in my program. Dur.
Thanks for the advice! I think I'll definitely check out my Epson options a bit more now.
