hey karen, i'm a sauerkraut fan too. can't say i was that young, eating it though lol i actually looked up some recipes using it a year or two ago around new years, since you're supposed to eat it for luck. i found a great recipe, using egg noodles, sauerkraut, some onion and butter. so easy and really tasty! i think you cook it for about 20 minutes to a half hour, i can't remember for sure.
I can't believe my husband doesn't like sauerkraut. It just blows my mind. I mean, how could you not? lol That recipe sounds yummy! If you find it or remember it, please share it with me. I would love to make it as a side with a pork loin. My mouth is watering now. :-)
1 bag egg noodles 1/4 cup chopped onion 1/4 cup butter, cubed 2 cups sauerkraut (i actually bought a jar and used the whole thing, to give it more flavor lol, and i also added margarine basically as it cooked)
Cook noodles according to package directions; drain In skillet, melt butter. Add onion; saute until tender. Add noodles and sauerkraut; cook and stir over medium heat for 2 minutes. Reduce heat; simmer, uncovered for 10-15 minutes, stirring occasionally
that's pretty much it. it's pretty simple, and it makes a nice side, or even just a main dish :-)
I served this on New Year's Day with pork chops and it was SOOOO GOOD! It was a wonderful side that I will definitely make more often. I'll also have no problem eating it as the main course, either. Thank you so much for sharing this with me!!
