Dinner

Now, the Small Persons are in bed, the Resident Geek and I have not yet had dinner, it's the end of the week... what do we have in the ingredients line? Ahha - left-over roast chicken; onions, check; garlic, check; a bit of spinach that needs eating up, check; mushrooms, check;... oh good, half a packet of arborio rice, check. That is very close to one of my favourite suppers. If you really want to lift it into gourmet class I can recommend a knob of butter and a generous pinch of saffron.

Nigel says creme fraiche, and insists that a generous handful of freshly-chopped parsley is essential. (Losing points on the this-is-what-you-make-out-of-your-leftovers scale for me, because frankly Nige, assuming I routinely have bucketloads of fresh parsley on hand when I haven't gone shopping is overestimating my horticultural prowess.)

I got into the habit of substituting good full-fat mayonnaise for the creme fraiche when First Small Person was dairy-intolerant (he's grown out of it now) - but this evening, since as usual I didn't have the parsley, thought I'd try stirring in a dollop of pesto at the end instead. Worked really quite well. (Or maybe in my usual Keith Floyd fashion I'd just had too much of the Sauvignon Blanc during the cooking process to discriminate...)
