In Latin America, people leave their leftovers out overnight all the time. We just heat it on the stove and so it stays warm all night, and then it won't spoil!! The only time this backfires is with things that have a lot of milk. Then I always get the food poisoning. It's a dreadful stomach ache when you eat spoiled milk, haha. But everything else should be fine!! Even meat, as long as it's warm. Even more so if it's seasoned...the salt will protect it! (That said, in my apartment, everything gets refrigerated because it seems simpler to me)

I do feel less like a lazy, non-fridge-using person though. I never thought about how other people do leftovers. XD
