I know the Organization's got something to do with hearts. Emptying hearts and shattered memories, so they can use people like puppets. They're the ones up in that castle across the river, and Xemnas is their leader.

The 21 Sacraments here though...that's the mystery killer, whose got something to do with the Crimson King.

No, I mean...taking your memories out. Making replicas from the data of your memories. Using you as a puppet once you can't remember what it is that's important, who you're supposed to really care for. That's what they tried to do to Sora, to get him to kill the heartless, the shadows, and collect up the gathered hearts from them, with the keyblade. That kind of thing is what they do
